I had a hard time finding any info about this project, except for this repo which I accidentally stumbled upon.

Please consider adding react-appinsights to docs.microsoft.com.
Adding it to this page could be a good start. But some more documentation might be even better.

Yes, I totally agree and it's on our to-do list.
For context, react-appinsights was created as a personal project, and only recently has been officially "adopted" by the AppInsights team - so the documentation is still lacking, but we're working on it.
