feat: enable all 12 arborist-metrics languages for code analysis

Switch from default features (6 languages) to features = ["all"]
which adds C, C++, C#, PHP, Kotlin, and Swift support. Update
SOURCE_EXTENSIONS and CLI-REFERENCE docs (EN+ES) accordingly.
