[CI] Release didn't publish new docs, or, version tag in docs is wrong

For example: https://scipp.github.io/ess/diffraction/ lists the 26.4.1 version, but the latest released version of the package is 26.5.x.

This should be fixed now after #588, I did a manual deploy https://github.com/scipp/ess/actions/runs/26217680614 so we don't have to wait for a new release to test it.
